Cauliflower sometimes gets a bad wrap as being bland, and I won't lie, it does not pass muster as a mashed potato substitute. Not in this house! But I do enjoy it, generally, especially in salads.
Cauliflower Salad with Yogurt and Mint
One head of cauliflower
3 or more garlic cloves, minced
1/2" piece of ginger, minced
2 T. oil
One container plain vegan yogurt
Several mint leaves
Chop the cauliflower into small pieces. Saute the garlic, ginger, and cauliflower in oil, but don't brown. You want to keep the cauliflower crunchy. Add to a bowl with the yogurt and the mint, and mix well. Chill until ready to serve. Enjoy!

Thai Style Coleslaw
Coleslaw is often a staple with barbecue. Some people, like my dad, preferred the more sour version. Me, I prefer a sweeter slaw. But I get bored of the typical slaw served in most restaurants. So, I like to try out different variations. This is one.
Thai Style Coleslaw
3 c. shredded cabbage (or just buy one bag of ready to go coleslaw in the produce section)
One carrot, shredded
One onion, sliced thin
2 t. dried mint
2 t. dried basil
2 T. lime juice
2 T. soy sauce
2 T. water
1 T. sugar
Toasted sesame seeds
Combine everything, except the sesame seeds, in a bowl and mix well. Let sit to blend flavors. Top with sesame seeds. Serve. Enjoy!

National Picnic Month
One of the designations for July is National Picnic Month. Pretty much any month that isn't cold is well suited for a picnic. I mean, do you really need an excuse to go on one?
The hubby took a week off for some vacation down time, and decided we would all go as a family to a water park. He and I had never been to this one, so barring rain, we were going. And what a beautiful day it turned out to be! Despite the delay in getting our food, due to someone (I won't mention any names...) shutting the keys to the car in the trunk and having to have someone come out to unlock the car for us, it was a great day and the food turned out fantastic!
I like to shop the food section at Marshall's because I always find the coolest pasta. I was originally only going to make one pasta salad dish, but the recipe on one of the packages just sounded too good, so I decided to make both.
Walnut Chick'n Salad
1/2 c. fresh spinach, chopped
One container plain soy yogurt
1 T. lemon juice
1 t. dry mustard
3 green onions, chopped
Handful of fresh dill, chopped
3 stalks of celery, chopped
3 c. cooked vegan chicken, your choice
One apple, cored and diced
1/2 c. walnuts, chopped
Combine all the ingredients and mix well. Add some vegan mayonnaise if it is too dry. Season with salt and pepper. Spoon onto your favorite slice of bread and enjoy!
Sesame Pasta Salad
1-1/2 c. vegan mayonnaise
1/3 c. water
3 T. soy sauce
1-1/2 T. fresh ginger, chopped
1 T. dark sesame oil
1 T. white vinegar
One package of pasta, your choice (mine looked like margarita glasses), cooked and cooled
1 c. carrots, chopped
1/2 c. radishes, chopped
Mix everything together in one large bowl and stir well to coat. Refrigerate.
Fishy Pasta Salad
One package of pasta, your choice (this one was shaped like lobsters), cooked and cooled
3/4 c. vegan mayonnaise
1/2 bunch of green onions, chopped
2 T. lemon juice
1/4 t. salt
1/4 t. onion powder
1/2 t. Old Bay seasoning
1/4 t. black pepper
1/4 t. hot sauce
Again, mix everything in one large bowl and stir well to coat. Refrigerate.
Fruit Salad with Mint
2 nectarines, pitted and cut into small pieces
3 kiwi, peeled and cut into small pieces
2 navel oranges, peeled and cut into small pieces
One pint of strawberries, hulled and quartered
One pint of blueberries
1/3 c. packed brown sugar
3 T. lime juice
1/4 c. fresh mint leaves, chopped
Mix the brown sugar, lime juice and mint leaves in a food processor until well blended. Add all of the fruit together in one large bowl, pour the sugar sauce over it and mix well. Refrigerate.
Add some iced tea and you've got a great picnic meal!

Summer Solstice and the Living is Easy
I live in the South. Needless to say, our summers are HOT. Last year we had a terrible drought, and the temps were regularly in three digits. I'm so happy this year we've had a goodly amount of rain and only a few days of 100+ temps.
I've read about some wonderful solstice celebrations - all outdoors - and I think how I wish I could do that here. Now, if I had my own backyard pool, all bets would be off. We'd be outside every day!
No matter. I've been eyeing these recipes for the first day of summer for a few months now. Fortunately, the day wasn't sweltering and I was able to talk the hubby into grilling. On a weeknight. Will wonders ever cease?
Macadamia Chick'n with Mango Salsa
1/2 c. soy sauce
2 garlic cloves, minced
1 T. brown sugar
1 T. olive oil
1 t. grated ginger
2 packages of Gardein Chick'n Scallopini, frozen
Mustard Sauce
Chopped macadamia nuts
Mango Salsa
Combine the soy sauce, garlic, brown sugar, olive oil and grated ginger in a ziplock gallon baggie. Add the Chick'n Scallopini. Move it all around to coat and put in the freezer. Periodically pull out the baggie and give it a wiggle to continue to coat. When the coals are ready - they should be about medium hot - grill the scallopini, turning, watching, and brushing with leftover marinade until they are done.
Mustard Sauce
1/2 c. Dijon mustard
2 T. brown sugar
2 T. pineapple juice
1/4 t. ground red pepper
Stir everything together, cover and chill.
Mango Salsa
2 mangoes, peeled and diced
One green pepper, diced
One jalapeno pepper, diced
3 T. cilantro, chopped
2 T. mint, chopped
One red onion, chopped
2 T. agave nectar
1 T. lime juice
1/4 t. ground red pepper
1/4 t. salt
Stir everything together, cover and chill.
To serve: Slather the Mustard Sauce on top of the scallopini. Sprinkle on some macadamias. Top with a spoonful of the Mango Salsa.
I tried the first scallopini with just the mustard sauce and the macadamias. I thought the sauce was a little too tangy for my tastes. On the second one I added the salsa atop, and it made quite a big difference. It softens the tang of the mustard while lending a slight sweetness. Much better, so I really recommend doing it that way.
Peanutty Pasta Salad
2 cucumbers, cut in half lengthwise, seeds removed, sliced in half moon shapes
1 c. soy sauce
1/2 c. coconut milk
1/2 c. rice wine vinegar
1/2 c. chunky peanut butter
4 garlic cloves, chopped
1 t. sesame oil
1/2 t. crushed red pepper
1/2 t. salt
One package angel hair pasta, cooked
3 carrots, peeled and shredded
6 green onions, sliced in diagonals
Dry roasted peanuts
Whisk all the saucy ingredients together, then pour over the pasta, cucumbers, carrots and onions. Mix together well, but gently. Chill. Serve with a spoonful of dry roasted peanuts on top.
Tropical Fruit Toss
2 navel oranges
One can pineapple chunks
One banana
One kiwi
1/2 c. red seedless grapes
Shredded coconut
Chopped macadamias
Peel and slice the oranges, banana and kiwi into bite sized pieces. Mix the fruit together in a bowl. Serve with a sprinkling of the coconut and macadamias.
Now, go enjoy your summer! Just keep cool!
