National Cucumber Day

Today is National Cucumber Day. I like cucumbers. I find them refreshing and summery. They are a common feature of tea sandwiches. You can find a couple of nice cucumber tea sandwiches here and here. Heck, you can even use them on your face, like this very lovely rinse for the face. My son likes to add cucumber slices to water during the hot summer months.

Some people just can't abide them, though. Makes them gassy. Those poor, unfortunate souls!

If you aren't a fan, but don't hate cucumbers, here's a nice little finger food to enjoy them.

Tortilla Bites with Sesame Soy Sauce


One container vegan cream cheese
One package whole wheat flour tortillas
1-3 c. cold, cooked long grain brown rice
1 cucumber, peeled and cut into strips
1 avocado, thinly sliced
One bunch organic spinach leaves
1 carrot, cut into strips
One can vegan tuna
1/4 c. soy sauce
1/2 t. crushed red pepper
1/4 t. ground ginger
1 T. sesame oil

Spread the cream cheese over one tortilla. I lightly sprinkled granulated garlic on top of this, but you can leave out if you want. Close to one edge of the tortilla, layer some rice, cucumber, avocado, carrot, spinach, and tuna. Roll up and tightly as possible, then slice the tortilla into one inch or so rounds.

Mix the soy sauce, red pepper, ginger, and sesame oil in a bowl. Serve this alongside the tortilla bites to dip in. Enjoy!

Baked Sweet and Savory Mashed Potatoes

My family is not crazy about sweet potatoes. While I can't say they are my favorite food, I do like them. Somewhat. This is one of those ways I like them, and in this case, my family really did, too.

Baked Sweet and Savory Mashed Potatoes


3 lbs. potatoes, cut into chunks
One 29 oz. can sweet potatoes in syrup, drained and mashed
One container vegan cream cheese
One container vegan sour cream
2/3 c. vegetable broth
Salt and pepper to taste
Vegan bacon bits

Boil the potatoes in water until tender, about 20 minutes. Drain. Return the potatoes to the pot, and add the sweet potatoes and cream cheese. Mash until smooth. Stir in the sour cream, broth, salt and pepper and bacon bits. Place this in a casserole dish and bake, uncovered, at 350 for 20 minutes. Serve. Enjoy!

Frickles

The first time I heard the word *frickles*, I kinda giggled. C'mon, admit it, it's a funny word! I couldn't find an original source for the recipe, but all of them were the same. They aren't pretty, but they are kinda tasty!

Frickles


One package of egg roll wrappers (make sure they are vegan!)
One jar of pickle spears
One package vegan lunch meat
One container vegan cream cheese

Lay out the eggroll wrapper at a diagonal. Spread with a thin layer of cream cheese. Top the cream cheese with a slice of lunchmeat. Lay the pickle at the bottom corner of the lunchmeat, and begin to roll the eggroll wrapper around all the layers, tucking in the sides as you go. Dampen the edges to make sure it all sticks and stays stuck. Fry in oil, seam down, until it begins to brown, then flip to the other side to brown. Drain. Serve. Enjoy!

Dilled Chick'n Salad

Since we've been eating salads the traditional way, in a bowl with a fork, I decided to change it up a bit and make one you can eat on lettuce or in a sandwich.

Dilled Chick'n Salad


Vegan chick'n - I used Trader Joes chick'n strips - sautéed and diced
2 sticks of celery, chopped
4 oz. vegan cream cheese
1/2 c. vegan mayonnaise
1/4 c. vegan sour cream
1 T. dill
1 t. dry mustard
1/4 t. salt
1/4 t. coarse ground black pepper

Combine all the ingredients in a bowl and stir to mix well. Cover and chill until ready to serve. Serve. Enjoy!

We ate ours on bread topped with lettuce. Everyone wanted at least two sandwiches each!

Fun with Food

We visit my parents every Sunday. Usually my mom serves up something to eat, anything from a full meal to banana bread. Since Easter fell on a Sunday recently, she asked if we wanted to do anything different or special. I knew she was going to cook up a spread, so I decided to bring my own version of a spread. A cheese spread!

Because it was Easter and springtime, I wanted to indulge myself by making something themed. So I did.

It's not a carrot, it's a cheese spread!


2 containers vegan cream cheese
1 c. Daiya Cheddar Style Shreds
1 can sliced black olives, drained
3 green onions, chopped
5 t. taco seasoning
Crushed nacho tortilla chips (see note)
Celery leaves
Crackers

Beat the cream cheese and Daiya until smooth. Gently fold in the olives, onions, and taco seasoning. Chill until somewhat firm. I wrapped mine in wax paper so I could easily mold it into a carrot shape. Before serving, unroll it from the wax paper and roll it in crushed nacho chips, covering the entire surface. Stick the celery leaves in the top. Place on a serving tray and surround it with crackers. Wait for the oohs and aahs.

National Junk Food Day

July 21 is National Junk Food Day. Because the next day was my son's birthday, and he loves the occasional night of snack food dining, I decided to wait. Okay, so we didn't celebrate Junk Food Day on Junk Food Day, but doesn't every day hold the honor of being a junk food day? Well, at least in some form? ;)

The good news is my birthday boy loved the snacks, and that's the most important thing!



I can't count how many potlucks or get togethers I've gone to where someone brought tortilla rollups. Such a simple and pretty thing, but I've never made them before. This offered me the perfect opportunity to correct that.



Tortilla Rollups

One container vegan cream cheese
5 green onions, chopped
2 small cans of chopped black olives
1/4 fake bacon bits
2 T. black bean salsa (see below)
1 t. cumin
2 garlic cloves, chopped
Hot pepper sauce, to taste
Flour tortillas

Soften the cream cheese in a bowl. Add the remaining ingredients, except for the flour tortillas, and blend well. Spoon some of the mixture on a flour tortilla and roll up. Place seam side down on a plate, and stack them on top of each other. Cover and chill. Before serving, slice into rounds.



Black Bean Salsa

2 cans black beans, rinsed and drained
2 tomatoes, chopped
1/2 c. red onion, diced
One green pepper, chopped
1/2 a jalapeno, seeded and chopped
2 garlic cloves, chopped
Handful of cilantro, chopped
3 T. lime juice
2 T. vegetable oil
1-1/2 t. hot pepper sauce
1/2 t. salt

Mix all of the ingredients in a large bowl, stirring to mix well. Cover and refrigerate until ready to serve. Serve with tortilla chips.



Don't buy the canned stuff. This bean dip rocks!

Tex Mex Dip

3 green onions, chopped
One can vegetarian refried beans
One can corn, drained
One package Daiya Pepperjack
1/2 c. beer
One package taco seasoning mix

Mix all the ingredients in a medium sized pot on medium heat. Stir occasionally until everything is mixed well and heated through. Serve with tortilla chips.



Spicy Cheese Crisps

1/2 c. vegan butter, softened
One package Daiya Pepperjack
2 c. whole wheat flour
Pecan halves

Beat butter, cheese and flour together until well mixed. Cover and chill overnight. Shape into balls and place on a cookie sheet. Use a glass to smash the balls into flat rounds. Top with a pecan half. Bake at 350 for 15 minutes, or until browned slightly. Let cool. Enjoy!

Crunchy Wraps

My kids and I went to the Vegfest earlier this month. It was the first time for us, and only the second year for the festival. We loved it! Seeing so many veg-friendly people gathered in one place was very exciting! There were numerous booths and displays to check out, and several places offered samples. We watched a demonstration on making kale chips. Note to self - make those chips tonight! Afterward we tried a new-for-us vegan restaurant and then hit a grocery store to pick up healthy goodies!

Getting home late I wanted to make something quick and easy. This definitely fit the bill!



Crunchy Wraps

Vegan cream cheese
Flour tortillas (we used spinach)
Shredded spinach
Shredded red cabbage
Sliced avocados
Chopped tomatoes
Diced cucumbers
Diced red onion

Spread the cream cheese on the tortilla and top with a sprinkle of the each vegetable. Roll up the tortilla and enjoy!

Even my non-vegan hubby loved these! Win!

April hath put a spirit of youth in everything...

or so said William Shakespeare. I guess he was right. There is something about the season of spring that brings with it renewal, and in that sense, a spirit of youth.

Which is probably why I like whimsy sometimes when I cook. Take these two recipes, for example.

Butterfly Pasta Salad



One package bow tie pasta (but I used bunny and egg shaped pasta)
1/3 c. chopped red onion
2 garlic cloves, minced
1/4 c. yellow bell pepper, chopped
1/4 c. red bell pepper, chopped
1 c. cherry tomatoes, halved
3 T. sliced black olives
One can chickpeas, drained and rinsed
1/2 c. chopped fresh parsley
1/2 c. chopped fresh basil
1/2 t. red pepper flakes
1/3 c. extra virgin olive oil
2 T. balsamic vinegar
2 T. pine nuts

Cook the pasta according to package directions, drain and rinse with cold water. Add the remaining ingredients to the pasta, stir to mix it up nicely, cover and chill. Enjoy!

Mini Tarts



2 packages of little graham cracker crusts (or make your own)
One container vegan cream cheese
1/2 c. frozen lemonade concentrate, thawed
1-1/2 c. vegan whipped dessert topping

In a mixing bowl, beat the cream cheese until fluffy. Add the lemonade and mix well. Fold in, gently, the whipped dessert topping. Spoon into little crusts and refrigerate until set. Top with little candy eggs.

Don't fall for the regular non-dairy whipped toppings. They aren't really non-dairy.
